Low Cholesterol Foods: Caramelized Onion Pizza

We don’t often think of pizza as a health food but this is one of our favourite low cholesterol recipes and it illustrates that a low cholesterol diet can still contain plenty of flavour!

Ingredients:

  • 1 large red onion cut into slices
  • 2 cloves crushed garlic
  • 2 tablespoons olive oil
  • 4 wholewheat pita breads
  • 1 cup sliced cherry tomatoes
  • 1 cup grated reduced fat mozzarella cheese
  • ¼ grated Romano cheese
  • ¼ cup fresh basil

Method:

  1. Gently fry the onion and garlic in the olive oil for around 10 minutes until very soft
  2. Place the pita breads under a medium grill and toast for a minute or two on each side
  3. Spread one side of each pita with the onion mixture
  4. Add the sliced tomatoes and top with mozzarella and Romano cheese
  5. Place under the grill for five minutes until cheese is melted
  6. Top with fresh basil to serve
